Rather than drape this cheese in a heavy layer of pastry, it is covered with a light and fresh layer of delicately spiced fruit.
BAKED BRIE WITH JEZEBEL PEACHES
1 tablespoon peach habanero pepper jelly
1 teaspoon spicy brown mustard
salt and freshly ground black pepper to taste
1 peach, peeled and diced
1 Brie round, packed in a wooden box
Heat oven to 350F. Stir together habanero pepper jelly and mustard. Season to taste with salt and pepper. Gently stir in peaches until coated.
Unwrap Brie, trim and discard rind from top. Return cheese to wooden box bottom, and place box on a baking sheet.
Bake for 10 minutes. Spoon peach mixture over Brie. Bake for 5 minutes or until cheese is melted. Transfer box to a platter and serve with bread or crackers.
